Host Odile’s recipe for an authentic Pavlova, Parisian-style

Odile in Paris is one of the most experienced hosts at Eatwith! She hosts four different events that allow you to learn how to cook and savor traditional French dishes and pastries.

The recipes that she uses have been passed down in her family for generations, and today she shares her classic recipe for Pavlova that’s become the signature dessert at her Eatwith events!

Ingredients

For the meringue:
4 egg whites (or 160 grams)
160 grams granulated sugar
160 grams powdered sugar

For the topping:
250 grams whipping cream
3 tbsp. sugar
500 grams fresh strawberries or raspberries

Preparation

Beat the egg whites on low speed until they form soft peaks.

Then, while continuing to whisk, gradually add the sugar one tablespoon at a time and continue to beat until the meringue forms stiff, shiny peaks. Then gently fold in the powdered sugar with a spatula.

Preheat the oven to 100°C.

Spread the meringue on a baking sheet in whatever shape you’d like your Pavlova to look like.

Bake for 1 hour and 15 minutes, then turn the oven off and leave the door slightly open to let the meringue completely cool down in the oven.

Before serving, place the meringue onto a serving dish.

Pour the whipping cream into a bowl and place it in the freezer for 20 minutes. Whip the cream and the sugar with an egg beater or standing mixer, then spoon the sweetened whipped cream on top of the cooled meringue.

Finally, add the fresh berries on top of the whipped cream. You can also cook some of the berries with a tablespoon on sugar into a syrup to pour on top of the Pavlova right before serving.
