A quick and easy recipe on how to make our Tel Aviv hosts’ signature dessert, a delicious milk ice cream with a cocoa crumble, at home!

Maya & Yonatan are a chef and pastry chef, husband and wife team. They’ve both worked in some of the best restaurants in Israel and now welcome hosts to their best-selling dining experiences that take place in their stunning Tel Aviv home.

Here they share their recipe for their signature dessert: Milk and Cookies. It’s a dessert inspired by Maya’s American grandmother who used to feed her milk and dark chocolate chip cookies for breakfast after having a sleepover.

For 10 people

Ingredients

For the milk ice cream:
250g milk
75g heavy cream
18g powdered milk
55g sugar
28g glucose or corn syrup

For the cocoa crumble:
65g white flour
22g cocoa powder
1g baking soda
2g fine salt
40g sugar
57g cold butter, cut into small cubes

Method

For the milk ice cream:
Put all of the ingredients in a saucepan and on a low heat mix them together until the sugar dissolves, then bring to a boil. Cool the mixture over an ice bath then refrigerate overnight or until completely cool.
Pour the mixture into an ice cream maker or freeze and stir every half hour until the ice cream has the right texture (this can take up to 4-5 hours).

For the cocoa crumble:
Preheat the oven to 160°C (320°F).

Put all of the ingredients in a standing mixer with the paddle attachment. Add the butter and mix at medium speed until the texture becomes like sand and there are no big lumps of butter. Spread the crumble on a tray with parchment paper and bake for 20-25 minutes, until the crumble is dry and crunchy.
