Khitchari is a multigrain stew that can be prepared in a variety of ways.
The term khitchari refers to a mixture usually involving two grains. Recipes can be easily adjustable, based on the need. For example, khitchari can be served unspiced for upset stomachs or with spices and veggies for an extra dose of nourishment. Here, host Pratap in London is sharing his go-to recipe which includes rice and lentils.

- 1 cup Basmati Rice
- 1 cup Red split lentils
- 2.5 tsp. Salt
- 1 tsp. Turmeric
- 1/2 head Cauliflower chopped into bite-size florets
- 1 Red onion, sliced
- 1 inch Ginger
- 3 cloves Garlic
- 10 pieces Cloves
- 1/2 tsp. Black peppercorns
- 1.5 tsp. Cumin seed
- 1 tsp. Coriander seed
- 1 tbsp. Ghee/Butter/Oil
- 2 Fresh chilis, chopped (1/2 tsp. if using dried flakes)
- Heat the butter/ghee/oil in a large heavy bottom saucepan.
- Add the whole spices and fry until they crackle.
- Bring in the red onion, ginger, and garlic into the saucepan and saute until they start to caramelize.
- Add all the remaining ingredients and 5 cups of water.
- Stir and stick a lid on the pot.
- Bring the mix to a boil and then turn to low heat. Cook with the lid on for 30-35 minutes.
- Serve with a squeeze of lemon and some freshly chopped coriander.
