While we’re all doing our best to keep our families, friends, and front-line workers safe, there’s been a few things we’ve been craving during this time inside. One of them is coming together with our favorite people for a few cocktails.
With summer ahead of us, our team has rounded up 7 drinks that remind us of the summer destinations we love and how to make them.
1. Singapore Sling
The destination this cocktail makes us dream about: Southeast Asia

I love this cocktail because it brings back a lot of memories of a trip when I had it for the first time. The story of the cocktail is also very interesting as it was created to look like juice in a time when women couldn’t drink alcohol in public in Singapore.

What you’ll need:
1 oz. dry gin, 1 oz. cherry brandy, 1 oz. Benedictine, ice, a few drops Angostura bitters, 1.5 oz. pineapple juice,1 oz. lime juice, sparkling water to top
Steps:
- Pour the gin, cherry brandy, and Benedictine into a mixing glass or pitcher. Add the ice and Angostura bitters.
- Stir well until the outside of your vessel is chilled.
- Pour the mix into a tall glass, then add the pineapple juice and lime juice. Gently stir.
- Top off the drink with sparkling water.
2. Hawaiian Mule

I love a good tropical twist. One of my favorite cocktails is a Moscow Mule, but adding pineapple does wonders to this drink. Every time I have a Hawaiian Mule, I feel like I’m laying on a beach, soaking in the sun, without a care in the world!

What you’ll need:
1.5 oz. vodka, 2 oz. pineapple juice, 1/2 oz. fresh lime juice, 3 oz. ginger beer
Steps:
- Combine vodka, pineapple juice, and lime juice in a cocktail glass or copper mug with ice.
- Stir well.
- Top off with ginger beer and stir until mixed.
3. Hugo

I love this cocktail because it tastes like summer: fresh and light. It’s a newer cocktail because it was created in the 90’s. In aperitivo tradition, the Hugo is an alternative to the more famous spritz.

What you’ll need:
1 oz. elderflower cordial, a splash of soda water, Prosecco to top off, ice, fresh mint, lime
Steps:
- Scoop a handful of ice into a large glass. Add in torn mint leaves.
- Add the elderflower cordial and a splash of soda water.
- Top off with Prosecco.
- Stir well and garnish will a lime slice.
4. Aperol Spritz

This is my favorite summertime aperitif. It’s light and refreshing with the perfect balance of sweet and bitterness!

What you’ll need:
Ice, 3 oz. Aperol, 3 oz. dry Prosecco, 1 oz. club soda, orange slice
Steps:
- Fill up a large wine glass with ice then pour in the Aperol.
- Add the Prosecco and top it off with a splash of club soda.
- Garnish with the orange slice.
5. Mezcal Margarita

I love this take on a classic margarita for its sourness and smoky flavor! Mezcal is always the base spirit in the cocktails I drink. It reminds me of a wonderful trip to Mexico, where we visited a mezcal distillery and were invited by some locals to have lunch in a forest.

What you’ll need:
Ice, 2 oz. Mezcal, 1 oz. fresh lime juice, 1/2 oz. agave syrup
Steps:
- Combine all ingredients in a shaker.
- Shake and strain into an ice-filled glass.
6. Blue Lagoon
The destinations this cocktail makes us dream about: Hawaii, The Caribbean

I love this cocktail because of its color. Turquoise makes me think about summer and the beach all the time!

What you’ll need:
Ice (cubed and crushed), 3 oz. blue curaçao, 3 oz. vodka, 1 juiced lemon, 1 juiced orange, 1 juiced lime, 8 maraschino cherries (for garnish) plus 1 tsp of the syrup, 6 oz. soda water, optional lemon pineapple slice for garnish
Steps:
- Put the ice in a large jug or pitcher. Pour in the curaçao, vodka, fruit juices, and the 1 tsp. syrup from the cherries.
- Stir until the outside of the glass is chilled.
- Fill four hurricane glasses halfway with crushed ice, then strain in the cocktail.
- Top off the glasses with the soda water, stirring carefully.
- Garnish with maraschino cherries, lemon, or pineapple.
7. Peach Bellini

I enjoyed this drink the summer I was in Italy and every time I have it now – I am back in a balcony overlooking the Venice Canals, the view of the Coliseum and the Tuscany hills.

What you’ll need:
2 peaches peeled and diced, 1/2 cup water, 1 tsp. lemon juice, a pinch of sugar, 1 bottle Prosecco, champagne or dry sparkling wine
Steps:
- Puree peaches, water, lemon juice, and sugar in a blender until smooth.
- Fill a champagne flute or stemless wine glass with a quarter full of the puree and then top off with the Prosecco, champagne or sparkling wine.
