A Christmas Dinner Party should always smell like home, with delectable smells coming from the oven. The biggest contributor? Delicious festive snacks like Gingerbread! This snack is typically served with royal icing on top, decorated to match the Christmas vibes. Claudia’s family tradition is centered around this snack, and she is now ready to share that warmth with you through this recipe…

 

 

 

 

 

Ingredients

  • 340g/12oz plain flour
  • 110g/4oz butter or margarine (butter is best for taste)
  • 2 ½ tsp ground ginger
  • 1tsp ground cinnamon
  • 1tsp bicarbonate of soda
  • 170g/6oz soft brown sugar
  • 1 egg, beaten
  • 50ml/3.5 Tbs golden syrup
  • Raisins, sprinkles, silver balls, sweets, and/or icing

To make the royal icing:

  • 1 egg white
  • 200g sifted icing sugar
  • 1 tsp lemon juice/vinegar
  • Food coloring (optional)

 

 

Instructions

  1. Preheat the oven to 190C
  2. Mix the ginger, bicarbonate of soda, sugar, and flour in a bowl
  3. Cut butter into slices and add to a bowl, rub together till mixed (use fingertips until it resembles breadcrumbs)
  4. Lightly beat the egg with a fork and add it to the bowl
  5. Add golden syrup (its easier if slightly warmed up in the microwave)
  6. Mix together to a ball – don’t overwork it
  7. Roll about ½ centimeter thick-cut shapes and put on a baking sheet
  8. Bake for 7 minutes – it should still be chewy
  9. Decorate as desired
